Jalapeño Popper Mac & Cheese

Ingredients

  • 4 cups of cooked macaroni
  • 2 cups of milk
  • 1 cup of white Velveeta, cubed
  • 2 cups of quesadilla cheese
  • 1/4 cup of breadcrumbs
  • 2 Tbs of butter
  • 2-3 garlic cloves, minced
  • 1/2 onion, chopped
  • 4 oz of cream cheese
  • 1 jalapeño, diced

Instructions

  • Preheat over to 350 degrees.
  • Cook macaroni according to package directions.
  • Using a skillet, add in butter and sauté the jalapeño, onions, and garlic until onions are translucent and the jalapeño and garlic are soft.
  • In a medium saucepan over medium-low heat, add milk and all cheeses and stir until melted and incorporated. Stir constantly to avoid sauce sticking to the bottom of the pan.
  • In a large bowl, combine macaroni noodles and cheese mixture.
  • Pour mixture into an oven safe baking dish and top with bread crumbs.
  • Place in oven for 8-10 minutes or until bread crumbs are toasted.
  • Serve and enjoy!

Avocado Mac & Cheese

Ingredients

  • 1/2 of the cheese sauce recipe
  • 4 cups of cooked macaroni
  • 1 cups of milk
  • 1/2 cup of queso blanco, cubed
  • 1 cup of quesadilla cheese
  • 2 oz of cream cheese
  • 2 ripe avocados, smashed
  • 1/4 cup of cilantro, chopped
  • 2-3 garlic cloves
  • Juice from 1/2 of a lime
  • Salt and pepper to taste

Instructions

  • Cook macaroni according to package directions.
  • Using a food processor or a blender, add in the avocados with pit removed, garlic, cilantro, lime juice, salt and pepper to taste.
  • Purée until well blended. Set aside.
  • In a medium saucepan, add in milk and all cheeses.
  • Cook and continuously stir until all cheese is completely melted.
  • Add into the cooked macaroni the avocado mixture and stir to combine.
  • Add in cheese sauce and completely mix together.
  • Enjoy!

Extra Creamy Mac & Cheese

Ingredients

  • 4 cups of cooked macaroni
  • 2 cups of milk
  • 1 cup of original Velveeta, cubed
  • 1 cup of white Velveeta, cubed
  • 4 oz of cream cheese
  • 2 cups of cheddar jack cheese

Instructions

  • Cook macaroni according to package directions.
  • In a medium saucepan, add in milk and all cheeses.
  • Continuously stir until completely melted.
  • Add in macaroni.
  • Enjoy!

Chicken Bacon Ranch Mac & Cheese

Ingredients

  • 4 cups of cooked macaroni
  • 2 cups of milk
  • 1 cup of white Velveeta, cubed
  • 1 cup of cooked chicken breast (raw is fine as well)
  • 1/2 pound of bacon
  • 2 Tbs of ranch powder
  • 1/2 cup of water
  • 4 oz of cream cheese
  • 2 cups of quesadilla cheese

Instructions

  • Make macaroni according package directions and desired softness.
  • In a skillet over medium heat, cook bacon until crispy.
  • Chop the bacon and set aside.
  • In the same skillet, add in chicken breast and 1/2 of the ranch powder.
  • Cook Chicken until lightly brown.
  • Pour in 1/2 cup of water to deglaze the skillet. Using a wooden spoon, scrape the bottom to release all the brown goodness from the bottom of the pan.
  • Once chicken is cooked through, remove from pan.
  • In the same pan, to keep all of the favoring. add milk, all cheeses, and the rest of the ranch powder.
  • Continuously stir until melted and combined.
  • In a large bowl add in macaroni and completely combine.
  • Stir in chicken and bacon.
  • Serve and enjoy!
