Easy Greek Dip


  • 16 oz plain Greek yogurt
  • 1 - 12 oz jar roasted red bell peppers, drained and chopped
  • ¼ cup crumbled feta cheese
  • 2 tbsp fresh dill, chopped
  • 1 tsp Greek seasoning
  • 3-4 garlic cloves, minced
  • Pita chips


  • Line a wire-mesh strainer with a coffee filter and add greek yogurt. Let sit for 15 minutes to remove excess liquid.
  • Add strained yogurt into a medium bowl, and discard strained liquid.
  • Stir peppers, feta cheese, fresh dill, garlic, and Greek seasoning into yogurt.
  • Cover and place in the refrigerator, and chill for one hour.
  • Serve with pita chips.

Easy Greek Salad


  • 1 head romaine lettuce, chopped
  • 4 whole ripe tomatoes, chopped
  • 1 large cucumber, chopped
  • 1/2 red onion, chopped thinly
  • 30 whole pitted Kalamata olives, minced
  • 6 oz feta cheese
  • Fresh parsley, roughly chopped


  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp sugar
  • 3-4 cloves garlic, minced
  • 2 tsp of fresh dill
  • Salt to taste
  • Pepper to taste
  • Juice of 1 lemon


  • In a large bowl, add the chopped lettuce.
  • Layer tomatoes, cucumbers, onions, halved olives, feta, and some parsley,
  • Combine the olive oil, vinegar, sugar, garlic, salt, and pepper in a bowl. Whisk together until combined.
  • Pour the dressing over the salad ingredients and toss.
  • Enjoy!

Greek Chicken and Potato Dinner


  • 4-5 bone-in chicken thighs (or breasts)
  • 4 gold potatoes, cut into wedges
  • 1 yellow onion, halved, then sliced
  • 1 entire head of garlic (10-15 cloves), minced
  • 2 cups chicken broth
  • 1 lemon, sliced


  • ½ cup olive oil
  • Juice of 1 lemon
  • 2 tbsp dried rosemary
  • ½ tsp ground nutmeg
  • Pinch of salt
  • Pinch of pepper


  • Parsley for garnish
  • Pitted Kalamata olives
  • Tzatziki Sauce


  • Preheat oven to 350 degrees.
  • In a mixing bowl, whisk together olive oil, lemon juice, garlic, rosemary, and nutmeg.
  • On a sheet pan, place potato wedges and onions.
  • Add chicken, olive oil mixture, chicken broth
  • Add lemon slices on top.
  • Bake uncovered for 45-60 minutes until chicken and potatoes are cooked through and tender (Chicken’s internal temperature should register at 165 degrees F).
  • Remove from heat and add Kalamata olives, if desired.
  • Garnish with fresh parsley.
  • Serve with Greek salad, Tzatziki sauce, and a side of pita bread.

Easy Instapot Chicken Pitas


Chicken Marinade

  • 5-6 boneless, skinless chicken thighs
  • 3-4 garlic cloves, minced
  • 1 tbsp apple cider vinegar
  • Juice of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1 bunch of fresh parsley, chopped
  • 1 tsp dried dill weed
  • Pinch of paprika
  • Pinch of onion powder
  • Pinch of salt
  • Pinch of pepper

For the pitas

  • 2 tomatoes, diced
  • 2 English cucumbers, diced
  • 1 red onion, chopped
  • 12-18 pitted Kalamata olives, halved
  • ¼ cup feta cheese
  • Pita bread wrap


  • Mix all of the ingredients for marinating the chicken into a sealable bag.
  • Marinade for 1-4 hours, or overnight.
  • Place the entire contents of the bag into the Instapot.
  • Cook on high pressure for 10 minutes.
    • It will take up the Instapot about 10 minutes to come up to pressure. Allow pressure to release naturally for 5 minutes, then manually release the rest.
